Vegetarian Meatballs
Prep time: 15 minutes | Cook time: 18 minutes | Serves 3
½ cup grated carrots
½ cup sweet onions
2 tablespoons olive oil
1 cup rolled oats
½ cup roasted cashews
2 cups cooked chickpeas
Juice of 1 lemon
2 tablespoons soy sauce
1 tablespoon flax meal
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon turmeric
  1. Mix the carrots, onions, and olive oil in the baking pan and stir to combine.
  2. Slide the baking pan into Rack Position 2, select Roast, set temperature to 350ºF (180ºC) and set time to 6 minutes.
  3. Stir the vegetables halfway through.
  4. When cooking is complete, the vegetables should be tender.
  5. Meanwhile, put the oats and cashews in a food processor or blender and pulse until coarsely ground. Transfer the mixture to a large bowl. Add the chickpeas, lemon juice, and soy sauce to the food processor and pulse until smooth. Transfer the chickpea mixture to the bowl of oat and cashew mixture.
  6. Remove the carrots and onions from the oven to the bowl of chickpea mixture. Add the flax meal, garlic powder, cumin, and turmeric and stir to incorporate.
  7. Scoop tablespoon-sized portions of the veggie mixture and roll them into balls with your hands. Transfer the balls to the air fryer basket.
  8. Increase the temperature to 370ºF (188ºC) and set time to 12 minutes on Bake. Flip the balls halfway through the cooking time.
  9. When cooking is complete, the balls should be golden brown.
  10. Serve warm.
