Parmesan Zucchini Chips
Prep time: 5 minutes | Cook time: 14 minutes | Serves 4
2 egg whites
Salt and black pepper, to taste
½ cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
¼ teaspoon garlic powder
2 medium zucchini, sliced
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. In a bowl, beat the egg whites with salt and pepper. In a separate bowl, thoroughly combine the bread crumbs, Parmesan cheese, and garlic powder.
  3. Dredge the zucchini slices in the egg white, then coat in the bread crumb mixture.
  4. Arrange the zucchini slices in the basket.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 14 minutes.
  6. Flip the zucchini halfway through.
  7. When cooking is complete, the zucchini should be tender.
  8. Remove from the oven to a plate and serve.
