Stuffed Portobello Mushrooms with Vegetables
Prep time: 5 minutes | Cook time: 8 minutes | Serves 4
4 portobello mushrooms, stem removed
1 tablespoon olive oil
1 tomato, diced
½ green bell pepper, diced
½ small red onion, diced
½ teaspoon garlic powder
Salt and black pepper, to taste
½ cup grated Mozzarella cheese
  1. Using a spoon to scoop out the gills of the mushrooms and discard them. Brush the mushrooms with the olive oil.
  2. In a mixing bowl, stir together the remaining ingredients except the Mozzarella cheese. Using a spoon to stuff each mushroom with the filling and scatter the Mozzarella cheese on top.
  3. Arrange the mushrooms in the air fryer basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Roast, set temperature to 330ºF (166ºC) and set time to 8 minutes.
  5. When cooking is complete, the cheese should be melted.
  6. Serve warm.
