Fish Tacos
Prep time: 10 minutes | Cook time: 10 to 15 minutes | Serves 6
1 tablespoon avocado oil
1 tablespoon Cajun seasoning
4 (5 to 6 ounce / 142 to 170 g) tilapia fillets
1 (14-ounce / 397-g) package coleslaw mix
12 corn tortillas
2 limes, cut into wedges

Line the baking pan with parchment paper.

In a shallow bowl, stir together the avocado oil and Cajun seasoning to make a marinade. Place the tilapia fillets into the bowl, turning to coat evenly.

Put the fillets in the baking pan in a single layer.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC), and set time to 10 minutes.

When cooked, the fish should be flaky. If necessary, continue cooking for 5 minutes more. Remove the fish from the oven to a plate.

Assemble the tacos: Spoon some of the coleslaw mix into each tortilla and top each with ¹⁄₃ of a tilapia fillet. Squeeze some lime juice over the top of each taco and serve immediately.
Tilapia Meunière with
Vegetables
Prep time: 10 minutes | Cook time: 20 minutes | Serves 4
10 ounces (283 g) Yukon Gold potatoes, sliced ¼-inch thick
5 tablespoons unsalted butter, melted, divided
1 teaspoon kosher salt, divided
4 (8-ounce / 227-g) tilapia fillets
½ pound (227 g) green beans, trimmed
Juice of 1 lemon
2 tablespoons chopped fresh parsley, for garnish

In a large bowl, drizzle the potatoes with 2 tablespoons of melted butter and ¼ teaspoon of kosher salt. Transfer the potatoes to the baking pan.

Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC), and set time to 20 minutes.

Meanwhile, season both sides of the fillets with ½ teaspoon of kosher salt. Put the green beans in the medium bowl and sprinkle with the remaining ¼ teaspoon of kosher salt and 1 tablespoon of butter, tossing to coat.

After 10 minutes, remove from the oven and push the potatoes to one side. Put the fillets in the middle of the pan and add the green beans on the other side. Drizzle the remaining 2 tablespoons of butter over the fillets. Return the pan to the oven and continue cooking, or until the fish flakes easily with a fork and the green beans are crisp-tender.

When cooked, remove from the oven. Drizzle the lemon juice over the fillets and sprinkle the parsley on top for garnish. Serve hot.
