Breaded Fish Fillets
Prep time: 20 minutes | Cook time: 7 minutes | Serves 4
1 pound (454 g) fish fillets
1 tablespoon coarse brown mustard
1 teaspoon Worcestershire sauce
½ teaspoon hot sauce
Salt, to taste
Cooking spray
Crumb Coating:
¾ cup panko bread crumbs
¼ cup stone-ground cornmeal
¼ teaspoon salt
  1. On your cutting board, cut the fish fillets crosswise into slices, about 1 inch wide.
  2. In a small bowl, stir together the mustard, Worcestershire sauce, and hot sauce to make a paste and rub this paste on all sides of the fillets. Season with salt to taste.
  3. In a shallow bowl, thoroughly combine all the ingredients for the crumb coating and spread them on a sheet of wax paper.
  4. Roll the fish fillets in the crumb mixture until thickly coated. Spritz all sides of the fish with cooking spray, then arrange them in the air fryer basket in a single layer.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC), and set time to 7 minutes.
  6. When cooking is complete, the fish should flake apart with a fork. Remove from the oven and serve warm.
Parmesan-Crusted Salmon Patties
Prep time: 10 minutes | Cook time: 13 minutes | Serves 4
1 pound (454 g) salmon, chopped into ½-inch pieces
2 tablespoons coconut flour
2 tablespoons grated Parmesan cheese
1½ tablespoons milk
½ white onion, peeled and finely chopped
½ teaspoon butter, at room temperature
½ teaspoon chipotle powder
½ teaspoon dried parsley flakes
¹⁄₃ teaspoon ground black pepper
¹⁄₃ teaspoon smoked cayenne pepper
1 teaspoon fine sea salt
  1. Put all the ingredients for the salmon patties in a bowl and stir to combine well.
  2. Scoop out 2 tablespoons of the salmon mixture and shape into a patty with your palm, about ½ inch thick. Repeat until all the mixture is used. Transfer to the refrigerator for about 2 hours until firm.
  3. When ready, arrange the salmon patties in the baking pan.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 395ºF (202ºC), and set time to 13 minutes.
  5. Flip the patties halfway through the cooking time.
  6. When cooking is complete, the patties should be golden brown. Remove from the oven and cool for 5 minutes before serving.
