Golden Beer-Battered Cod
Prep time: 5 minutes | Cook time: 15 minutes | Serves 4
2 eggs
1 cup malty beer
1 cup all-purpose flour
½ cup cornstarch
1 teaspoon garlic powder
Salt and pepper, to taste
4 (4-ounce / 113-g) cod fillets
Cooking spray
  1. In a shallow bowl, beat together the eggs with the beer. In another shallow bowl, thoroughly combine the flour and cornstarch. Sprinkle with the garlic powder, salt, and pepper.
  2. Dredge each cod fillet in the flour mixture, then in the egg mixture. Dip each piece of fish in the flour mixture a second time.
  3. Spritz the air fryer basket with cooking spray. Arrange the cod fillets in the pan in a single layer.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC), and set time to 15 minutes.
  5. Flip the fillets halfway through the cooking time.
  6. When cooking is complete, the cod should reach an internal temperature of 145ºF (63ºC) on a meat thermometer and the outside should be crispy. Let the fish cool for 5 minutes and serve.
