Spiced Red Snapper
Prep time: 13 minutes | Cook time: 10 minutes | Serves 4
1 teaspoon olive oil
1½ teaspoons black pepper
¼ teaspoon garlic powder
¼ teaspoon thyme
⅛ teaspoon cayenne pepper
4 (4-ounce / 113-g) red snapper fillets, skin on
4 thin slices lemon
Nonstick cooking spray
  1. Spritz the baking pan with nonstick cooking spray.
  2. In a small bowl, stir together the olive oil, black pepper, garlic powder, thyme, and cayenne pepper. Rub the mixture all over the fillets until completely coated.
  3. Lay the fillets, skin-side down, in the baking pan and top each fillet with a slice of lemon.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 390ºF (199ºC), and set time to 10 minutes.
  5. Flip the fillets halfway through the cooking time.
  6. When cooking is complete, the fish should be cooked through. Let the fish cool for 5 minutes and serve.
