Baked Flounder Fillets
Prep time: 8 minutes | Cook time: 12 minutes | Serves 2
2 flounder fillets, patted dry
1 egg
½ teaspoon Worcestershire sauce
¼ cup almond flour
¼ cup coconut flour
½ teaspoon coarse sea salt
½ teaspoon lemon pepper
¼ teaspoon chili powder
Cooking spray
  1. In a shallow bowl, beat together the egg with Worcestershire sauce until well incorporated.
  2. In another bowl, thoroughly combine the almond flour, coconut flour, sea salt, lemon pepper, and chili powder.
  3. Dredge the fillets in the egg mixture, shaking off any excess, then roll in the flour mixture to coat well.
  4. Spritz the baking pan with cooking spray. Place the fillets in the pan.
  5. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 390ºF (199ºC), and set time to 12 minutes.
  6. After 7 minutes, remove from the oven and flip the fillets and spray with cooking spray. Return the pan to the oven and continue cooking for 5 minutes, or until the fish is flaky.
  7. When cooking is complete, remove from the oven and serve warm.
