Garlic Butter Shrimp Scampi
Prep time: 5 minutes | Cook time: 8 minutes | Serves 4
Sauce:
¼ cup unsalted butter
2 tablespoons fish stock or chicken broth
2 cloves garlic, minced
2 tablespoons chopped fresh basil leaves
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley, plus more for garnish
1 teaspoon red pepper flakes
Shrimp:
1 pound (454 g) large shrimp, peeled and deveined, tails removed
Fresh basil sprigs, for garnish
  1. Put all the ingredients for the sauce in the baking pan and stir to incorporate.
  2. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC), and set time to 8 minutes.
  3. After 3 minutes, remove from the oven and add the shrimp to the baking pan, flipping to coat in the sauce. Return to the oven and continue cooking for 5 minutes until the shrimp are pink and opaque. Stir the shrimp twice during cooking.
  4. When cooking is complete, remove from the oven. Serve garnished with the parsley and basil sprigs.
