Garlic-Butter Shrimp
with Vegetables
Prep time: 10 minutes | Cook time: 15 minutes | Serves 4
1 pound (454 g) small red potatoes, halved
2 ears corn, shucked and cut into rounds, 1 to 1½ inches thick
2 tablespoons Old Bay or similar seasoning
½ cup unsalted butter, melted
1 (12- to 13-ounce / 340- to 369-g) package kielbasa or other smoked sausages
3 garlic cloves, minced
1 pound (454 g) medium shrimp, peeled and deveined

Place the potatoes and corn in a large bowl.

Stir together the butter and Old Bay seasoning in a small bowl. Drizzle half the butter mixture over the potatoes and corn, tossing to coat. Spread out the vegetables in the baking pan.

Slide the baking pan into Rack Position 2, select Roast, set temperature to 350ºF (180ºC), and set time to 15 minutes.

Meanwhile, cut the sausages into 2-inch lengths, then cut each piece in half lengthwise. Put the sausages and shrimp in a medium bowl and set aside.

Add the garlic to the bowl of remaining butter mixture and stir well.

After 10 minutes, remove the pan and pour the vegetables into the large bowl. Drizzle with the garlic butter and toss until well coated. Arrange the vegetables, sausages, and shrimp in the pan.

Return to the oven and continue cooking. After 5 minutes, check the shrimp for doneness. The shrimp should be pink and opaque. If they are not quite cooked through, roast for an additional 1 minute.

When done, remove from the oven and serve on a plate.
