Easy Scallops
Prep time: 5 minutes | Cook time: 4 minutes | Serves 2
12 medium sea scallops, rinsed and patted dry
1 teaspoon fine sea salt
¾ teaspoon ground black pepper, plus more for garnish
Fresh thyme leaves, for garnish (optional)
Avocado oil spray
  1. Coat the air fryer basket with avocado oil spray.
  2. Place the scallops in a medium bowl and spritz with avocado oil spray. Sprinkle the salt and pepper to season.
  3. Transfer the seasoned scallops to the basket, spacing them apart.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 390ºF (199ºC), and set time to 4 minutes.
  5. Flip the scallops halfway through the cooking time.
  6. When cooking is complete, the scallops should reach an internal temperature of just 145ºF (63ºC) on a meat thermometer. Sprinkle the pepper and thyme leaves on top for garnish, if desired. Serve immediately.
