Herbed Scallops with Vegetables
Prep time: 15 minutes | Cook time: 9 minutes | Serves 4
1 cup frozen peas
1 cup green beans
1 cup frozen chopped broccoli
2 teaspoons olive oil
½ teaspoon dried oregano
½ teaspoon dried basil
12 ounces (340 g) sea scallops, rinsed and patted dry
  1. Put the peas, green beans, and broccoli in a large bowl. Drizzle with the olive oil and toss to coat well. Transfer the vegetables to the air fryer basket.
  2. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC), and set time to 5 minutes.
  3. When cooking is complete, the vegetables should be fork-tender. Transfer the vegetables to a serving bowl. Scatter with the oregano and basil and set aside.
  4. Place the scallops in the basket.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC), and set time to 4 minutes.
  6. When cooking is complete, the scallops should be firm and just opaque in the center. Remove from the oven to the bowl of vegetables and toss well. Serve warm.
