Breaded Scallops

1 egg
3 tablespoons flour
1 cup bread crumbs
1 pound (454 g) fresh scallops
2 tablespoons olive oil
Salt and black pepper, to taste
  1. In a bowl, lightly beat the egg. Place the flour and bread crumbs into separate shallow dishes.
  2. Dredge the scallops in the flour and shake off any excess. Dip the flour-coated scallops in the beaten egg and roll in the bread crumbs.
  3. Brush the scallops generously with olive oil and season with salt and pepper, to taste. Transfer the scallops to the air fryer basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 360ºF (182ºC), and set time to 7 minutes.
  5. Flip the scallops halfway through the cooking time.
  6. When cooking is complete, the scallops should reach an internal temperature of just 145ºF (63ºC) on a meat thermometer. Remove from the oven. Let the scallops cool for 5 minutes and serve.
