Roasted Scallops with Snow Peas

1 pound (454 g) sea scallops
3 tablespoons hoisin sauce
½ cup toasted sesame seeds
6 ounces (170 g) snow peas, trimmed
3 teaspoons vegetable oil, divided
1 teaspoon soy sauce
1 teaspoon sesame oil
1 cup roasted mushrooms
  1. Brush the scallops with the hoisin sauce. Put the sesame seeds in a shallow dish. Roll the scallops in the sesame seeds until evenly coated.
  2. Combine the snow peas with 1 teaspoon of vegetable oil, the sesame oil, and soy sauce in a medium bowl and toss to coat.
  3. Grease the baking pan with the remaining 2 teaspoons of vegetable oil. Put the scallops in the middle of the pan and arrange the snow peas around the scallops in a single layer.
  4. Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC), and set time to 8 minutes.
  5. After 5 minutes, remove the pan and flip the scallops. Fold in the mushrooms and stir well. Return the pan to the oven and continue cooking.
  6. When done, remove from the oven and cool for 5 minutes. Serve warm.
