Bacon-Wrapped and Cheese-Stuffed Chicken
Prep time: 10 minutes | Cook time: 20 minutes | Serves 4
4 (5-ounce / 142-g) boneless, skinless chicken breasts, pounded to ¼ inch thick
1 cup cream cheese
2 tablespoons chopped fresh chives
8 slices thin-cut bacon
Sprig of fresh cilantro, for garnish
Cooking spray
- Spritz the air fryer basket with cooking spray.
- On a clean work surface, slice the chicken horizontally to make a 1-inch incision on top of each chicken breast with a knife, then cut into the chicken to make a pocket. Leave a ½-inch border along the sides and bottom.
- Combine the cream cheese and chives in a bowl. Stir to mix well, then gently pour the mixture into the chicken pockets.
- Wrap each stuffed chicken breast with 2 bacon slices, then secure the ends with toothpicks.
- Arrange them in the basket.
- Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 20 minutes.
- Flip the bacon-wrapped chicken halfway through the cooking time.
- When cooking is complete, the bacon should be browned and crispy.
- Transfer them on a large plate and serve with cilantro on top.
