Apricot-Glazed Chicken Drumstick

Prep time: 15 minutes | Cook time: 30 minutes | Makes 6 drumsticks
For the Glaze:
½ cup apricot preserves
½ teaspoon tamari
¼ teaspoon chili powder
2 teaspoons Dijon mustard
For the Chicken:
6 chicken drumsticks
½ teaspoon seasoning salt
1 teaspoon salt
½ teaspoon ground black pepper
Cooking spray
Make the glaze:

Combine the ingredients for the glaze in a saucepan, then heat over low heat for 10 minutes or until thickened.

Turn off the heat and sit until ready to use.
Make the Chicken:

Spritz the air fryer basket with cooking spray.

Combine the seasoning salt, salt, and pepper in a small bowl. Stir to mix well.

Place the chicken drumsticks in the basket. Spritz with cooking spray and sprinkle with the salt mixture on both sides.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 370ºF (188ºC) and set time to 20 minutes.

Flip the chicken halfway through.

When cooking is complete, the chicken should be well browned.

Baste the chicken with the glaze and air fry for 2 more minutes or until the chicken tenderloin is glossy.

Serve immediately.
