Barbecue Chicken and Coleslaw Tostadas
Prep time: 15 minutes | Cook time: 10 minutes | Makes 4 tostadas
Coleslaw:
¼ cup sour cream
¼ small green cabbage, finely chopped
½ tablespoon white vinegar
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
Tostadas:
2 cups pulled rotisserie chicken
½ cup barbecue sauce
4 corn tortillas
½ cup shredded Mozzarella cheese
Cooking spray
Make the Coleslaw:
  1. Combine the ingredients for the coleslaw in a large bowl. Toss to mix well.
  2. Refrigerate until ready to serve.
Make the Tostadas:
  1. Spritz the air fryer basket with cooking spray.
  2. Toss the chicken with barbecue sauce in a separate large bowl to combine well. Set aside.
  3. Place one tortilla in the basket and spritz with cooking spray.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 370ºF (188ºC) and set time to 10 minutes.
  5. Flip the tortilla and spread the barbecue chicken and cheese over halfway through.
  6. When cooking is complete, the tortilla should be browned and the cheese should be melted.
  7. Serve the tostadas with coleslaw on top.
