Nice Goulash
Prep time: 5 minutes | Cook time: 17 minutes | Serves 2
2 red bell peppers, chopped
1 pound (454 g) ground chicken
2 medium tomatoes, diced
½ cup chicken broth
Salt and ground black pepper, to taste
Cooking spray
  1. Spritz the baking pan with cooking spray.
  2. Set the bell pepper in the baking pan.
  3. Slide the baking pan into Rack Position 2, select Convection Broil, set temperature to 365ºF (185ºC) and set time to 5 minutes.
  4. Stir the bell pepper halfway through.
  5. When broiling is complete, the bell pepper should be tender.
  6. Add the ground chicken and diced tomatoes in the baking pan and stir to mix well.
  7. Set the time of oven to 12 minutes. Stir the mixture and mix in the chicken broth, salt and ground black pepper halfway through.
  8. When cooking is complete, the chicken should be well browned.
  9. Serve immediately.
