Herbed Turkey Breast with Simple Dijon Sauce

1 teaspoon chopped fresh sage
1 teaspoon chopped fresh tarragon
1 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh rosemary leaves
1½ teaspoons sea salt
1 teaspoon ground black pepper
1 (2-pound / 907-g) turkey breast
3 tablespoons Dijon mustard
3 tablespoons butter, melted
Cooking spray
- Spritz the air fryer basket with cooking spray.
- Combine the herbs, salt, and black pepper in a small bowl. Stir to mix well. Set aside.
- Combine the Dijon mustard and butter in a separate bowl. Stir to mix well.
- Rub the turkey with the herb mixture on a clean work surface, then brush the turkey with Dijon mixture.
- Arrange the turkey in the basket.
- Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 390ºF (199ºC) and set time to 30 minutes.
- Flip the turkey breast halfway through.
- When cooking is complete, an instant-read thermometer inserted in the thickest part of the turkey breast should reach at least 165ºF (74ºC).
- Transfer the cooked turkey breast on a large plate and slice to serve.
