Spanish Chicken and Pepper Baguette

1¼ pounds (567 g) assorted small chicken parts, breasts cut into halves
¼ teaspoon salt
¼ teaspoon ground black pepper
2 teaspoons olive oil
½ pound (227 g) mini sweet peppers
¼ cup light mayonnaise
¼ teaspoon smoked paprika
½ clove garlic, crushed
Baguette, for serving
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. Toss the chicken with salt, ground black pepper, and olive oil in a large bowl.
  3. Arrange the sweet peppers and chicken in the basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC) and set time to 20 minutes.
  5. Flip the chicken and transfer the peppers on a plate halfway through.
  6. When cooking is complete, the chicken should be well browned.
  7. Meanwhile, combine the mayo, paprika, and garlic in a small bowl. Stir to mix well.
  8. Assemble the baguette with chicken and sweet pepper, then spread with mayo mixture and serve.
