Yakitori
Prep time: 10 minutes | Cook time: 15 minutes | Serves 4
½ cup mirin
¼ cup dry white wine
½ cup soy sauce
1 tablespoon light brown sugar
1½ pounds (680 g) boneless, skinless chicken thighs, cut into 1½-inch pieces, fat trimmed
4 medium scallions, trimmed, cut into 1½-inch pieces

Special Equipment:
4 (4-inch) bamboo skewers, soaked in water for at least 30 minutes
  1. Combine the mirin, dry white wine, soy sauce, and brown sugar in a saucepan. Bring to a boil over medium heat. Keep stirring.
  2. Boil for another 2 minutes or until it has a thick consistency. Turn off the heat.
  3. Spritz the air fryer basket with cooking spray.
  4. Run the bamboo skewers through the chicken pieces and scallions alternatively.
  5. Arrange the skewers in the basket, then brush with mirin mixture on both sides. Spritz with cooking spray.
  6. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 10 minutes.
  7. Flip the skewers halfway through.
  8. When cooking is complete, the chicken and scallions should be glossy.
  9. Serve immediately.
