Rosemary Turkey Scotch Eggs
Prep time: 15 minutes | Cook time: 12 minutes | Serves 4
1 egg
1 cup panko bread crumbs
½ teaspoon rosemary
1 pound (454 g) ground turkey
4 hard-boiled eggs, peeled
Salt and ground black pepper, to taste
Cooking spray

Spritz the air fryer basket with cooking spray.

Whisk the egg with salt in a bowl. Combine the bread crumbs with rosemary in a shallow dish.

Stir the ground turkey with salt and ground black pepper in a separate large bowl, then divide the ground turkey into four portions.

Wrap each hard-boiled egg with a portion of ground turkey. Dredge in the whisked egg, then roll over the breadcrumb mixture.

Place the wrapped eggs in the basket and spritz with cooking spray.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 12 minutes.

Flip the eggs halfway through.

When cooking is complete, the scotch eggs should be golden brown and crunchy.
