Turkey and Bean Stuffed Peppers
Prep time: 20 minutes | Cook time: 15 minutes | Serves 4
½ pound (227 g) lean ground turkey
4 medium bell peppers
1 (15-ounce / 425-g) can black beans, drained and rinsed
1 cup shredded Cheddar cheese
1 cup cooked long-grain brown rice
1 cup mild salsa
1¼ teaspoons chili powder
1 teaspoon salt
½ teaspoon ground cumin
½ teaspoon freshly ground black pepper
Chopped fresh cilantro, for garnish

In a large skillet over medium-high heat, cook the turkey, breaking it up with a spoon, until browned, about 5 minutes. Drain off any excess fat.

Cut about ½ inch off the tops of the peppers and then cut in half lengthwise. Remove and discard the seeds and set the peppers aside.

In a large bowl, combine the browned turkey, black beans, Cheddar cheese, rice, salsa, chili powder, salt, cumin, and black pepper. Spoon the mixture into the bell peppers.

Lightly spray the basket with cooking spray. Arrange the bell peppers in the pan.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set the temperature to 350ºF (180ºC) and set the time to 15 minutes.

When cooking is complete, the stuffed peppers should be lightly charred and wilted.

Allow to cool for a few minutes and garnish with cilantro before serving.
