Turkey and Cauliflower Meatloa f
Prep time: 15 minutes | Cook time: 50 minutes | Serves 6
2 pounds (907 g) lean ground turkey
1¹⁄₃ cups riced cauliflower
2 large eggs, lightly beaten
¼ cup almond flour
²⁄₃ cup chopped yellow or white onion
1 teaspoon ground dried turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
Cooking spray
  1. Spritz the baking pan with cooking spray.
  2. Combine all the ingredients in a large bowl. Stir to mix well. Pour half of the mixture in the prepared pan and press with a spatula to coat the bottom evenly. Spritz the mixture with cooking spray.
  3. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 350ºF (180ºC) and set time to 25 minutes.
  4. When cooking is complete, the meat should be well browned and the internal temperature should reach at least 165ºF (74ºC).
  5. Remove the pan from the oven and serve immediately.
