Thai Drumsticks with Green Beans
Prep time: 5 minutes | Cook time: 25 minutes | Serves 4
8 skin-on chicken drumsticks
1 teaspoon kosher salt, divided
1 pound (454 g) green beans, trimmed
2 garlic cloves, minced
2 tablespoons vegetable oil
¹⁄₃ cup Thai sweet chili sauce
-
Salt the drumsticks on all sides with ½ teaspoon of kosher salt. Let sit for a few minutes, then blot dry with a paper towel. Place in the baking pan.
-
Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC), and set time to 25 minutes.
-
While the chicken cooks, place the green beans in a large bowl. Add the remaining kosher salt, the garlic, and oil. Toss to coat.
-
After 15 minutes, remove from the oven. Brush the drumsticks with the sweet chili sauce. Place the green beans in the pan. Return the pan to the oven and continue cooking.
-
When cooking is complete, the green beans should be sizzling and browned in spots and the chicken cooked through, reading 165ºF (74ºC) on a meat thermometer. Serve the chicken with the green beans on the side.
