Chicken Ciabatta Sandwiches

2 (8-ounce / 227-g) boneless, skinless chicken breasts
1 teaspoon kosher salt, divided
1 cup all-purpose flour
1 teaspoon Italian seasoning
2 large eggs
2 tablespoons plain yogurt
2 cups panko bread crumbs
1¹⁄₃ cups grated Parmesan cheese, divided
2 tablespoons olive oil
4 ciabatta rolls, split in half
½ cup marinara sauce
½ cup shredded Mozzarella cheese
  1. Lay the chicken breasts on a cutting board and cut each one in half parallel to the board so you have 4 fairly even, flat fillets. Place a piece of plastic wrap over the chicken pieces and use a rolling pin to gently pound them to an even thickness, about ½-inch thick. Season the chicken on both sides with ½ teaspoon of kosher salt.
  2. Place the flour on a plate and add the remaining kosher salt and the Italian seasoning. Mix with a fork to distribute evenly. In a wide bowl, whisk together the eggs with the yogurt. In a small bowl combine the panko, 1 cup of Parmesan cheese, and olive oil. Place this in a shallow bowl.
  3. Lightly dredge both sides of the chicken pieces in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. Finally, dredge the chicken in the bread crumbs. Carefully place the breaded chicken pieces in the basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC), and set time to 10 minutes.
  5. After 5 minutes, remove from the oven. Carefully turn the chicken over. Return to the oven and continue cooking. When cooking is complete, remove from the oven.
  6. Unfold the rolls on the basket and spread each half with 1 tablespoon of marinara sauce. Place a chicken breast piece on the bottoms of the buns and sprinkle the remaining Parmesan cheese over the chicken pieces. Divide the Mozzarella among the top halves of the buns.
  7. Select Convection Broil, set temperature to High, and set time to 3 minutes.
  8. Check the sandwiches halfway through. When cooking is complete, the Mozzarella cheese should be melted and bubbly.
  9. Remove from the oven and close the sandwiches and serve.
