Pineapple Chicken

1½ pounds (680 g) boneless, skinless chicken breasts, cut into 1-inch chunks
¾ cup soy sauce
2 tablespoons ketchup
2 tablespoons brown sugar
2 tablespoons rice vinegar
1 red bell pepper, cut into 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
6 scallions, cut into 1-inch pieces
1 cup (¾-inch chunks) fresh pineapple, rinsed and drained
Cooking spray
  1. Place the chicken in a large bowl. Add the soy sauce, ketchup, brown sugar, vinegar, red and green peppers, and scallions. Toss to coat.
  2. Spritz the baking pan with cooking spray and place the chicken and vegetables on the pan.
  3. Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC), and set time to 10 minutes.
  4. After 6 minutes, remove from the oven. Add the pineapple chunks to the pan and stir. Return the pan to the oven and continue cooking.
  5. When cooking is complete, remove from the oven. Serve with steamed rice, if desired.
