Super Lemon Chicken
Prep time: 5 minutes | Cook time: 35 minutes | Serves 6
3 (8-ounce / 227-g) boneless, skinless chicken breasts, halved, rinsed
1 cup dried bread crumbs
¼ cup olive oil
¼ cup chicken broth
Zest of 1 lemon
3 medium garlic cloves, minced
½ cup fresh lemon juice
½ cup water
¼ cup minced fresh oregano
1 medium lemon, cut into wedges
¼ cup minced fresh parsley, divided
Cooking spray
  1. Pour the bread crumbs in a shadow dish, then roll the chicken breasts in the bread crumbs to coat.
  2. Spritz a skillet with cooking spray, and brown the coated chicken breasts over medium heat about 3 minutes on each side. Transfer the browned chicken to the baking pan.
  3. In a small bowl, combine the remaining ingredients, except the lemon and parsley. Pour the sauce over the chicken.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set the temperature to 325ºF (163ºC) and set the time to 30 minutes.
  5. After 15 minutes, remove the pan from the oven. Flip the breasts. Return the pan to the oven and continue cooking.
  6. When cooking is complete, the chicken should no longer pink.
  7. Transfer to a serving platter, and spoon the sauce over the chicken. Garnish with the lemon and parsley.
