Italian Steak and Spinach Rolls
Prep time: 50 minutes | Cook time: 9 minutes | Serves 4
2 teaspoons dried Italian seasoning
2 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 pound (454 g) flank steak, ¼ to ½ inch thick
1 (10-ounce / 284-g) package frozen spinach, thawed and squeezed dry
½ cup diced jarred roasted red pepper
1 cup shredded Mozzarella cheese
Cooking spray

Combine the Italian seasoning, garlic, vegetable oil, salt, and ground black pepper in a large bowl. Stir to mix well.

Dunk the steak in the seasoning mixture and toss to coat well. Wrap the bowl in plastic and marinate under room temperature for at least 30 minutes.

Spritz the air fryer basket with cooking spray.

Remove the marinated steak from the bowl and unfold on a clean work surface, then spread the top of the steak with a layer of spinach, a layer of red pepper and a layer of cheese. Leave a ¼-inch edge uncovered.

Roll the steak up to wrap the filling, then secure with 3 toothpicks. Cut the roll in half and transfer the rolls in the prepared basket, seam side down.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 9 minutes.

Flip the rolls halfway through the cooking.

When cooking is complete, the steak should be lightly browned and the internal temperature reaches at least 145ºF (63ºC).

Remove the rolls from the oven and slice to serve.
