Simple Ground Beef with Zucchini
Prep time: 5 minutes | Cook time: 12 minutes | Serves 4
1½ pounds (680 g) ground beef
1 pound (454 g) chopped zucchini
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried rosemary
2 tablespoons fresh chives, chopped

In a large bowl, combine all the ingredients, except for the chives, until well blended.

Place the beef and zucchini mixture in the baking pan.

Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 400ºF (205ºC) and set time to 12 minutes.

When cooking is complete, the beef should be browned and the zucchini should be tender.

Divide the beef and zucchini mixture among four serving dishes. Top with fresh chives and serve hot.
