Panko Crusted Calf’s Liver Strips
Prep time: 15 minutes | Cook time: 5 minutes | Serves 4
1 pound (454 g) sliced calf’s liver, cut into ½-inch wide strips
2 eggs
2 tablespoons milk
½ cup whole wheat flour
2 cups panko bread crumbs
Salt and ground black pepper, to taste
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. Rub the calf’s liver strips with salt and ground black pepper on a clean work surface.
  3. Whisk the eggs with milk in a large bowl. Pour the flour in a shallow dish. Pour the panko on a separate shallow dish.
  4. Dunk the liver strips in the flour, then in the egg mixture. Shake the excess off and roll the strips over the panko to coat well.
  5. Arrange the liver strips in the basket and spritz with cooking spray.
  6. Put the air fryer basket on the baking pan and slide into Rack Position 2, Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 390ºF (199ºC) and set time to 5 minutes.
  7. Flip the strips halfway through.
  8. When cooking is complete, the strips should be browned.
  9. Serve immediately.
