Tuscan Air Fried Veal Loin
Prep time: 1 hour 10 minutes | Cook time: 12 minutes | Makes 3 veal chops
1½ teaspoons crushed fennel seeds
1 tablespoon minced fresh rosemary leaves
1 tablespoon minced garlic
1½ teaspoons lemon zest
1½ teaspoons salt
½ teaspoon red pepper flakes
2 tablespoons olive oil
3 (10-ounce / 284-g) bone-in veal loin, about ½ inch thick
  1. Combine all the ingredients, except for the veal loin, in a large bowl. Stir to mix well.
  2. Dunk the loin in the mixture and press to submerge. Wrap the bowl in plastic and refrigerate for at least an hour to marinate.
  3. Arrange the veal loin in the basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 12 minutes.
  5. Flip the veal halfway through.
  6. When cooking is complete, the internal temperature of the veal should reach at least 145ºF (63ºC) for medium rare.
  7. Serve immediately.
