Lamb Rack with Pistachi o

½ cup finely chopped pistachios
1 teaspoon chopped fresh rosemary
3 tablespoons panko bread crumbs
2 teaspoons chopped fresh oregano
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
1 lamb rack, bones fat trimmed and frenched
1 tablespoon Dijon mustard
  1. Put the pistachios, rosemary, bread crumbs, oregano, olive oil, salt, and black pepper in a food processor. Pulse to combine until smooth.
  2. Rub the lamb rack with salt and black pepper on a clean work surface, then place it in the basket.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 380ºF (193ºC) and set time to 12 minutes.
  4. Flip the lamb halfway through.
  5. When cooking is complete, the lamb should be lightly browned.
  6. Transfer the lamb on a plate and brush with Dijon mustard on the fat side, then sprinkle with the pistachios mixture over the lamb rack to coat well.
  7. Put the lamb rack back to the oven and air fry for 8 more minutes or until the internal temperature of the rack reaches at least 145ºF (63ºC).
  8. Remove the lamb rack from the oven with tongs and allow to cool for 5 minutes before slicing to serve.
