Classic Walliser Schnitzel
Prep time: 5 minutes | Cook time: 14 minutes | Serves 2
½ cup pork rinds
½ tablespoon fresh parsley
½ teaspoon fennel seed
½ teaspoon mustard
¹⁄₃ tablespoon cider vinegar
1 teaspoon garlic salt
¹⁄₃ teaspoon ground black pepper
2 eggs
2 pork schnitzel, halved
Cooking spray
  1. Spritz the air fryer basket with cooking spray.
  2. Put the pork rinds, parsley, fennel seeds, and mustard in a food processor. Pour in the vinegar and sprinkle with salt and ground black pepper. Pulse until well combined and smooth.
  3. Pour the pork rind mixture in a large bowl. Whisk the eggs in a separate bowl.
  4. Dunk the pork schnitzel in the whisked eggs, then dunk in the pork rind mixture to coat well. Shake the excess off.
  5. Arrange the schnitzel in the pan and spritz with cooking spray.
  6. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC) and set time to 14 minutes.
  7. After 7 minutes, remove from the oven. Flip the schnitzel. Return to the oven and continue cooking.
  8. When cooking is complete, the schnitzel should be golden and crispy.
  9. Serve immediately.
