Smoky Paprika Pork and Vegetable Kabobs
Prep time: 25 minutes | Cook time: 15 minutes | Serves 4
1 pound (454 g) pork tenderloin, cubed
1 teaspoon smoked paprika
Salt and ground black pepper, to taste
1 green bell pepper, cut into chunks
1 zucchini, cut into chunks
1 red onion, sliced
1 tablespoon oregano
Cooking spray
Special Equipment:
Small bamboo skewers, soaked in water for 20 minutes to keep them from burning while cooking
  1. Spritz the air fryer basket with cooking spray.
  2. Add the pork to a bowl and season with the smoked paprika, salt and black pepper. Thread the seasoned pork cubes and vegetables alternately onto the soaked skewers. Arrange the skewers in the pan.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC) and set time to 15 minutes.
  4. After 7 minutes, remove from the oven. Flip the pork skewers. Return to the oven and continue cooking.
  5. When cooking is complete, the pork should be browned and vegetables are tender.
  6. Transfer the skewers to the serving dishes and sprinkle with oregano. Serve hot.
