Pork Sausage with Cauliflower Mash

1 pound (454 g) cauliflower, chopped
6 pork sausages, chopped
½ onion, sliced
3 eggs, beaten
¹⁄₃ cup Colby cheese
1 teaspoon cumin powder
½ teaspoon tarragon
½ teaspoon sea salt
½ teaspoon ground black pepper
Cooking spray
  1. Spritz the baking pan with cooking spray.
  2. In a saucepan over medium heat, boil the cauliflower until tender. Place the boiled cauliflower in a food processor and pulse until puréed. Transfer to a large bowl and combine with remaining ingredients until well blended.
  3. Pour the cauliflower and sausage mixture into the pan.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 365ºF (185ºC) and set time to 27 minutes.
  5. When cooking is complete, the sausage should be lightly browned.
  6. Divide the mixture among six serving dishes and serve warm.
