Pork Butt with Garlicky Coriander-Parsley Sauce
Prep time: 1 hour 15 minutes | Cook time: 30 minutes | Serves 4
1 teaspoon golden flaxseeds meal
1 egg white, well whisked
1 tablespoon soy sauce
1 teaspoon lemon juice, preferably freshly squeezed
1 tablespoon olive oil
1 pound (454 g) pork butt, cut into pieces 2-inches long
Salt and ground black pepper, to taste
Garlicky Coriander-Parsley Sauce:
3 garlic cloves, minced
¹⁄₃ cup fresh coriander leaves
¹⁄₃ cup fresh parsley leaves
1 teaspoon lemon juice
½ tablespoon salt
¹⁄₃ cup extra-virgin olive oil

Combine the flaxseeds meal, egg white, soy sauce, lemon juice, salt, black pepper, and olive oil in a large bowl. Dunk the pork strips in and press to submerge.

Wrap the bowl in plastic and refrigerate to marinate for at least an hour.

Arrange the marinated pork strips in the basket.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 380ºF (193ºC) and set time to 30 minutes.

After 15 minutes, remove from the oven. Flip the pork. Return to the oven and continue cooking.

When cooking is complete, the pork should be well browned.

Meanwhile, combine the ingredients for the sauce in a small bowl. Stir to mix well. Arrange the bowl in the refrigerator to chill until ready to serve.

Serve the air fried pork strips with the chilled sauce.
