Calf’s Liver Golden Strips
Prep time: 15 minutes | Cook time: 4 to 5 minutes | Serves 4
1 pound (454 g) sliced calf’s liver, cut into about ½-inch-wide strips
Salt and ground black pepper, to taste
2 eggs
2 tablespoons milk
½ cup whole wheat flour
1½ cups panko bread crumbs
½ cup plain bread crumbs
½ teaspoon salt
¼ teaspoon ground black pepper
Cooking spray
  1. Sprinkle the liver strips with salt and pepper.
  2. Beat together the egg and milk in a bowl. Place wheat flour in a shallow dish. In a second shallow dish, mix panko, plain bread crumbs, ½ teaspoon salt, and ¼ teaspoon pepper.
  3. Dip liver strips in flour, egg wash, and then bread crumbs, pressing in coating slightly to make crumbs stick.
  4. Spritz the air fryer basket with cooking spray. Place strips in a single layer in the basket.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set the temperature to 400ºF (205ºC) and set the time to 4 minutes.
  6. After 2 minutes, remove from the oven. Flip the strips with tongs. Return to the oven and continue cooking.
  7. When cooking is complete, the liver strips should be crispy and golden.
  8. Serve immediately.
