Dijon Pork Tenderloin

3 tablespoons Dijon mustard
3 tablespoons honey
1 teaspoon dried rosemary
1 tablespoon olive oil
1 pound (454 g) pork tenderloin, rinsed and drained
Salt and freshly ground black pepper, to taste

In a small bowl, combine the Dijon mustard, honey, and rosemary. Stir to combine.

Rub the pork tenderloin with salt and pepper on all sides on a clean work surface.

Heat the olive oil in an oven-safe skillet over high heat. Sear the pork loin on all sides in the skillet for 6 minutes or until golden brown. Flip the pork halfway through.

Remove from the heat and spread honey-mustard mixture evenly to coat the pork loin.

Select Bake of the oven, set temperature to 425ºF (220ºC) and set time to 15 minutes.

When cooking is complete, an instant-read thermometer inserted in the pork should register at least 145ºF (63ºC).

Remove from the oven and allow to rest for 3 minutes. Slice the pork into ½-inch slices and serve.
