Dijon Pork Tenderloin

3 tablespoons Dijon mustard
3 tablespoons honey
1 teaspoon dried rosemary
1 tablespoon olive oil
1 pound (454 g) pork tenderloin, rinsed and drained
Salt and freshly ground black pepper, to taste
  1. In a small bowl, combine the Dijon mustard, honey, and rosemary. Stir to combine.
  2. Rub the pork tenderloin with salt and pepper on all sides on a clean work surface.
  3. Heat the olive oil in an oven-safe skillet over high heat. Sear the pork loin on all sides in the skillet for 6 minutes or until golden brown. Flip the pork halfway through.
  4. Remove from the heat and spread honey-mustard mixture evenly to coat the pork loin.
  5. Select Bake of the oven, set temperature to 425ºF (220ºC) and set time to 15 minutes.
  6. When cooking is complete, an instant-read thermometer inserted in the pork should register at least 145ºF (63ºC).
  7. Remove from the oven and allow to rest for 3 minutes. Slice the pork into ½-inch slices and serve.
