Pork Fried Rice with Scrambled Egg

3 scallions, diced (about ½ cup)
½ red bell pepper, diced (about ½ cup)
2 teaspoons sesame oil
½ pound (227 g) pork tenderloin, diced
½ cup frozen peas, thawed
½ cup roasted mushrooms
½ cup soy sauce
2 cups cooked rice
1 egg, beaten
  1. Place the scallions and red pepper in the baking pan. Drizzle with the sesame oil and toss the vegetables to coat them in the oil.
  2. Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC), and set time to 12 minutes.
  3. While the vegetables are cooking, place the pork in a large bowl. Add the peas, mushrooms, soy sauce, and rice and toss to coat the ingredients with the sauce.
  4. After about 4 minutes, remove from the oven. Place the pork mixture on the pan and stir the scallions and peppers into the pork and rice. Return the pan to the oven and continue cooking.
  5. After another 6 minutes, remove from the oven. Move the rice mixture to the sides to create an empty circle in the middle of the pan. Pour the egg in the circle. Return the pan to the oven and continue cooking.
  6. When cooking is complete, remove from the oven and stir the egg to scramble it. Stir the egg into the fried rice mixture. Serve immediately.
