Sirloin Steak and Pepper Fajitas

8 (6-inch) flour tortillas
1 pound (454 g) top sirloin steak, sliced ¼-inch thick
1 red bell pepper, deseeded and sliced ½-inch thick
1 green bell pepper, deseeded and sliced ½-inch thick
1 jalapeño, deseeded and sliced thin
1 medium onion, sliced ½-inch thick
2 tablespoons vegetable oil
2 tablespoons Mexican seasoning
1 teaspoon kosher salt
2 tablespoons salsa
1 small avocado, sliced
  1. Line the baking pan with aluminum foil. Place the tortillas on the foil in two stacks and wrap in the foil.
  2. Slide the baking pan into Rack Position 2, select Roast, set temperature to 325ºF (163ºC), and set time to 6 minutes.
  3. After 3 minutes, remove from the oven and flip the packet of tortillas over. Return to the oven and continue cooking.
  4. While the tortillas warm, place the steak, bell peppers, jalapeño, and onion in a large bowl and drizzle the oil over. Sprinkle with the Mexican seasoning and salt, and toss to coat.
  5. When cooking is complete, remove from the oven and place the packet of tortillas on top of the oven to keep warm. Place the beef and peppers mixture in the baking pan, spreading out into a single layer as much as possible.
  6. Select Roast, set temperature to 375ºF (190ºC), and set time to 9 minutes.
  7. After about 5 minutes, remove from the oven and stir the ingredients. Return to the oven and continue cooking.
  8. When cooking is complete, the vegetables will be soft and browned in places, and the beef will be browned on the outside and barely pink inside. Remove from the oven. Unwrap the tortillas and spoon the fajita mixture into the tortillas. Serve with salsa and avocado slices.
