Sriracha Beef and Broccoli
Prep time: 10 minutes | Cook time: 15 minutes | Serves 4
12 ounces (340 g) broccoli, cut into florets (about 4 cups)
1 pound (454 g) flat iron steak, cut into thin strips
½ teaspoon kosher salt
¾ cup soy sauce
1 teaspoon Sriracha sauce
3 tablespoons freshly squeezed orange juice
1 teaspoon cornstarch
1 medium onion, thinly sliced
  1. Line the baking pan with aluminum foil. Place the broccoli on top and sprinkle with 3 tablespoons of water. Seal the broccoli in the foil in a single layer.
  2. Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC), and set time to 6 minutes.
  3. While the broccoli steams, sprinkle the steak with the salt. In a small bowl, whisk together the soy sauce, Sriracha, orange juice, and cornstarch. Place the onion and beef in a large bowl.
  4. When cooking is complete, remove from the oven. Open the packet of broccoli and use tongs to transfer the broccoli to the bowl with the beef and onion, discarding the foil and remaining water. Pour the sauce over the beef and vegetables and toss to coat. Place the mixture in the baking pan.
  5. Select Roast, set temperature to 375ºF (190ºC), and set time to 9 minutes.
  6. After about 4 minutes, remove from the oven and gently toss the ingredients. Return to the oven and continue cooking.
  7. When cooking is complete, the sauce should be thickened, the vegetables tender, and the beef barely pink in the center. Serve warm.
