Cheesy Roasted Jalapeño Poppers
Prep time: 10 minutes | Cook time: 15 minutes | Serves 8
6 ounces (170 g) cream cheese, at room temperature
4 ounces (113 g) shredded Cheddar cheese
1 teaspoon chili powder
12 large jalapeño peppers, deseeded and sliced in half lengthwise
2 slices cooked bacon, chopped
¼ cup panko bread crumbs
1 tablespoon butter, melted
  1. In a medium bowl, whisk together the cream cheese, Cheddar cheese and chili powder. Spoon the cheese mixture into the jalapeño halves and arrange them in the baking pan.
  2. In a small bowl, stir together the bacon, bread crumbs and butter. Sprinkle the mixture over the jalapeño halves.
  3. Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC) and set time to 15 minutes.
  4. When cooking is complete, remove from the oven. Let the poppers cool for 5 minutes before serving.
