Cheesy Roasted Jalapeño Poppers
Prep time: 10 minutes | Cook time: 15 minutes | Serves 8
6 ounces (170 g) cream cheese, at room temperature
4 ounces (113 g) shredded Cheddar cheese
1 teaspoon chili powder
12 large jalapeño peppers, deseeded and sliced in half lengthwise
2 slices cooked bacon, chopped
¼ cup panko bread crumbs
1 tablespoon butter, melted
- In a medium bowl, whisk together the cream cheese, Cheddar cheese and chili powder. Spoon the cheese mixture into the jalapeño halves and arrange them in the baking pan.
- In a small bowl, stir together the bacon, bread crumbs and butter. Sprinkle the mixture over the jalapeño halves.
- Slide the baking pan into Rack Position 2, select Roast, set temperature to 375ºF (190ºC) and set time to 15 minutes.
- When cooking is complete, remove from the oven. Let the poppers cool for 5 minutes before serving.
