Spicy and Sweet Roasted Nuts
Prep time: 5 minutes | Cook time: 15 minutes | Makes 4 cups
1 pound (454 g) walnut halves and pieces
½ cup granulated sugar
3 tablespoons vegetable oil
1 teaspoon cayenne pepper
½ teaspoon fine salt
- Soak the walnuts in a large bowl with boiling water for a minute or two. Drain the walnuts. Stir in the sugar, oil and cayenne pepper to coat well. Spread the walnuts in a single layer in the baking pan.
- Slide the baking pan into Rack Position 2, select Roast, set temperature to 325ºF (163ºC) and set time to 15 minutes.
- After 7 or 8 minutes, remove from the oven. Stir the nuts. Return the pan to the oven and continue cooking, check frequently.
- When cooking is complete, the walnuts should be dark golden brown. Remove from the oven. Sprinkle the nuts with the salt and let cool. Serve warm.
