Spicy and Sweet Roasted Nuts
Prep time: 5 minutes | Cook time: 15 minutes | Makes 4 cups
1 pound (454 g) walnut halves and pieces
½ cup granulated sugar
3 tablespoons vegetable oil
1 teaspoon cayenne pepper
½ teaspoon fine salt
  1. Soak the walnuts in a large bowl with boiling water for a minute or two. Drain the walnuts. Stir in the sugar, oil and cayenne pepper to coat well. Spread the walnuts in a single layer in the baking pan.
  2. Slide the baking pan into Rack Position 2, select Roast, set temperature to 325ºF (163ºC) and set time to 15 minutes.
  3. After 7 or 8 minutes, remove from the oven. Stir the nuts. Return the pan to the oven and continue cooking, check frequently.
  4. When cooking is complete, the walnuts should be dark golden brown. Remove from the oven. Sprinkle the nuts with the salt and let cool. Serve warm.
