Polenta Fries with Chili-Lime May o
Prep time: 10 minutes | Cook time: 28 minutes | Serves 4
Polenta Fries:
2 teaspoons vegetable or olive oil
¼ teaspoon paprika
1 pound (454 g) prepared polenta, cut into 3-inch × ½-inch strips
Salt and freshly ground black pepper, to taste
Chili-Lime Mayo:
½ cup mayonnaise
1 teaspoon chili powder
1 teaspoon chopped fresh cilantro
¼ teaspoon ground cumin
Juice of ½ lime
Salt and freshly ground black pepper, to taste
  1. Mix the oil and paprika in a bowl. Add the polenta strips and toss until evenly coated. Transfer the polenta strips to the air fryer basket.
  2. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC), and set time to 28 minutes.
  3. Stir the polenta strips halfway through the cooking time.
  4. Meanwhile, whisk together all the ingredients for the chili-lime mayo in a small bowl.
  5. When cooking is complete, remove the polenta fries from the oven to a plate. Season as desired with salt and pepper. Serve alongside the chili-lime mayo as a dipping sauce.
