Browned Ricotta with
Capers and Lemon

1½ cups whole milk ricotta cheese
2 tablespoons extra-virgin olive oil
2 tablespoons capers, rinsed
Zest of 1 lemon, plus more for garnish
1 teaspoon finely chopped fresh rosemary
Pinch crushed red pepper flakes
Salt and freshly ground black pepper, to taste
1 tablespoon grated Parmesan cheese
- In a mixing bowl, stir together the ricotta cheese, olive oil, capers, lemon zest, rosemary, red pepper flakes, salt, and pepper until well combined.
- Spread the mixture evenly in the baking pan.
- Slide the baking pan into Rack Position 2, select Air Fry, set temperature to 380ºF (193ºC), and set time to 8 minutes.
- When cooking is complete, the top should be nicely browned. Remove from the oven and top with a sprinkle of grated Parmesan cheese. Garnish with the lemon zest and serve warm.
