Browned Ricotta with Capers and Lemon
Prep time: 10 minutes | Cook time: 8 minutes | Serves 4 to 6
1½ cups whole milk ricotta cheese
2 tablespoons extra-virgin olive oil
2 tablespoons capers, rinsed
Zest of 1 lemon, plus more for garnish
1 teaspoon finely chopped fresh rosemary
Pinch crushed red pepper flakes
Salt and freshly ground black pepper, to taste
1 tablespoon grated Parmesan cheese
  1. In a mixing bowl, stir together the ricotta cheese, olive oil, capers, lemon zest, rosemary, red pepper flakes, salt, and pepper until well combined.
  2. Spread the mixture evenly in the baking pan.
  3. Slide the baking pan into Rack Position 2, select Air Fry, set temperature to 380ºF (193ºC), and set time to 8 minutes.
  4. When cooking is complete, the top should be nicely browned. Remove from the oven and top with a sprinkle of grated Parmesan cheese. Garnish with the lemon zest and serve warm.
