Cheesy Zucchini Tots

2 medium zucchini (about 12 ounces / 340 g), shredded
1 large egg, whisked
½ cup grated pecorino romano cheese
½ cup panko bread crumbs
¼ teaspoon black pepper
1 clove garlic, minced

  1. Using your hands, squeeze out as much liquid from the zucchini as possible. In a large bowl, mix the zucchini with the remaining ingredients except the oil until well incorporated.
  2. Make the zucchini tots: Use a spoon or cookie scoop to place tablespoonfuls of the zucchini mixture onto a lightly floured cutting board and form into 1-inch logs.
  3. Spritz the air fryer basket with cooking spray. Place the zucchini tots in the pan.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC), and set time to 6 minutes.
  5. When cooking is complete, the tots should be golden brown. Remove from the oven to a serving plate and serve warm.
