1 cup self-rising yellow cornmeal
½ cup all-purpose flour
1 teaspoon sugar
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 large egg
¹⁄₃ cup canned creamed corn
1 cup minced onion
2 teaspoons minced jalapeño pepper
2 tablespoons olive oil, divided
  1. Thoroughly combine the cornmeal, flour, sugar, salt, and pepper in a large bowl.
  2. Whisk together the egg and corn in a small bowl. Pour the egg mixture into the bowl of cornmeal mixture and stir to combine. Stir in the minced onion and jalapeño. Cover the bowl with plastic wrap and place in the refrigerator for 30 minutes.
  3. Line the air fryer basket with parchment paper and lightly brush it with 1 tablespoon of olive oil.
  4. Scoop out the cornmeal mixture and form into 24 balls, about 1 inch.
  5. Arrange the balls on the parchment, leaving space between each ball.
  6. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 375ºF (190ºC), and set time to 10 minutes.
  7. After 5 minutes, remove from the oven. Flip the balls and brush them with the remaining 1 tablespoon of olive oil. Return to the oven and continue cooking for 5 minutes until golden brown.
  8. When cooking is complete, remove the balls (hush puppies) from the oven and serve on a plate.
