Shrimp Toasts with Sesame Seeds
Prep time: 15 minutes | Cook time: 8 minutes | Serves 4 to 6
½ pound (227 g) raw shrimp, peeled and deveined
1 egg, beaten
2 scallions, chopped, plus more for garnish
2 tablespoons chopped fresh cilantro
2 teaspoons grated fresh ginger
1 to 2 teaspoons sriracha sauce
1 teaspoon soy sauce
½ teaspoon toasted sesame oil
6 slices thinly sliced white sandwich bread
½ cup sesame seeds

Thai chili sauce, for serving
  1. In a food processor, add the shrimp, egg, scallions, cilantro, ginger, sriracha sauce, soy sauce and sesame oil, and pulse until chopped finely. You’ ll need to stop the food processor occasionally to scrape down the sides. Transfer the shrimp mixture to a bowl.
  2. On a clean work surface, cut the crusts off the sandwich bread. Using a brush, generously brush one side of each slice of bread with shrimp mixture.
  3. Place the sesame seeds on a plate. Press bread slices, shrimp-side down, into sesame seeds to coat evenly. Cut each slice diagonally into quarters.
  4. Spritz the air fryer basket with cooking spray. Spread the coated slices in a single layer in the basket.
  5. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC), and set time to 8 minutes.
  6. Flip the bread slices halfway through.
  7. When cooking is complete, they should be golden and crispy. Remove from the oven to a plate and let cool for 5 minutes. Top with the chopped scallions and serve warm with Thai chili sauce.
