Bruschetta with Tomato and Basil
Prep time: 5 minutes | Cook time: 3 minutes | Serves 6
4 tomatoes, diced
¹⁄₃ cup shredded fresh basil
¼ cup shredded Parmesan cheese
1 tablespoon balsamic vinegar
1 tablespoon minced garlic
1 teaspoon olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 loaf French bread, cut into 1-inch-thick slices
Cooking spray
- Mix together the tomatoes and basil in a medium bowl. Add the cheese, vinegar, garlic, olive oil, salt, and pepper and stir until well incorporated. Set aside.
- Spritz the baking pan with cooking spray and lay the bread slices in the pan in a single layer. Spray the slices with cooking spray.
- Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 250ºF (121ºC), and set time to 3 minutes.
- When cooking is complete, remove from the oven to a plate. Top each slice with a generous spoonful of the tomato mixture and serve.
