Bruschetta with Tomato and Basil

4 tomatoes, diced
¹⁄₃ cup shredded fresh basil
¼ cup shredded Parmesan cheese
1 tablespoon balsamic vinegar
1 tablespoon minced garlic
1 teaspoon olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 loaf French bread, cut into 1-inch-thick slices
Cooking spray
  1. Mix together the tomatoes and basil in a medium bowl. Add the cheese, vinegar, garlic, olive oil, salt, and pepper and stir until well incorporated. Set aside.
  2. Spritz the baking pan with cooking spray and lay the bread slices in the pan in a single layer. Spray the slices with cooking spray.
  3. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 250ºF (121ºC), and set time to 3 minutes.
  4. When cooking is complete, remove from the oven to a plate. Top each slice with a generous spoonful of the tomato mixture and serve.
